Creamy Beets

I love beets. My mom says this is my best version of the vegetable! Creamy, simple & delicious.

You need: creamybeets2

3 beets

Grape seed oil

Fresh Parsley

1 clove of garlic

Salt and pepper

1/4 cup sour cream

2 tbsp cream cheese

Do this: 

Wash, peel and cut your beets into pieces just a little larger than bite size.

Drizzle grape seed oil over raw beets. Add salt and pepper to taste. Mix together and place on a large piece of tin foil.

Add your parsley ( I like to use at least two tables spoons here) and chopped garlic clove.

You now want to fold your tin foil over the beets, sealing this completely.

I like to let this sit for a few hours to marinate.

When ready to cook, place in oven for 45 minutes at 400. Or until your beets are soft, could take longer if your beets are cut thick.

Now for your creamy sauce !

Melt your cream cheese and add to the sour cream. Finely chop some parsley (just a few leaves at this point) and mix together.

Plate your beets and creamy sauce together, ground some fresh pepper on top & enjoy, serves two.
