Parsnip, Apple & Sage Soup

I love making soup. Bake to boil to blend. The flavours in this are superb. And fun fact its accidentally vegan.

1 lb parsnips

3 macintosh apples

1 leek

5 fresh sage leaves

1/2 cup grape seed oil

5 cups vegetable broth

Salt & Pepper

Do this:

Preheat the oven to 375.

Peel your parsnips and cut into chunks. Keep the peel on the apple, cut into chunks. Slice your leek.

Now place all three of these ingredientsΒ into a mixing bowl coat with the grape seed oil.

Dice up your sage leaves and mix everything throughly. Add some salt and pepper.

Place onto a stone pan and bake in the oven for 30 minutes.

Once done everything should be golden brown.

Place this into a soup pot with the vegetable broth. Bring to a boil.

Boil for 10 minutes and then puree! I use a hand blender for my soups.

You can now add some extra salt and pepper to taste and you are ready to serve !

This soup is so naturally creamy, no cream or butter is needed. Its a wonderful vegan option.
