We had just moved into our new place and I invited the family over for Sunday lunch. This beautiful salmon recipe was born! It’s perfect on a sunny summer day, lunch or dinner on the patio! Enjoy!
You need:
1 large fillet of salmon (aprox.6 servings)
1 tbsp olive oil
2 tbsp brown sugar
1 tsp hot smoked paprika
1 1/2 lime
2 avocados
20 cherry tomatoes
1 green onion
Salt and pepper
Do this:
Mix the olive oil, 1 tbsp of brown sugar, paprika and 1/2 a lime. Spread this over top of the salmon and let it marinate in the fridge overnight or at least for 5 hours.
When you are ready to bake, sprinkle the remaining 1 tbsp of brown sugar over top of the salmon.
Bake at 425 for 15-20 minutes, depending on thickness of the fish. The salmon should be cooked medium rare for best taste & texture!
In the meantime prepare your salsa, the avocado should be cut into medium sized chunks, slice the cherry tomatoes & green onion and then squeeze and entire lime into this mixture. Stir and add salt and pepper.
When you are ready to serve top each piece of salmon with this zesty salsa.
Serves about 6-8 people.
