A fun way to get your veggies in at breakfast
1/2 cup of pureed carrots
1/4 cup oats
1 tbsp brown sugar
1/4 cup shredded coconut
1/2 cup dried cranberries
1 tsp vanilla
3 tsp cinnamon
1/2 cup flour
Coconut oil for frying
Start off with your carrots, you need about 5 small to medium sized carrots to get 1/2 cup of puree. Peel them, chop into pieces and boil. When soft puree, I used a magic bullet for this. Then set aside.
Mix your two eggs with the oats. Then add in the brown sugar, coconut, cranberries, and vanilla.
In a separate bowl mash your banana and mix in the cinnamon.
Then combine this with your egg mix. Mix well and then add in your flour. And lastly the pureed carrots.You should now have a sweet smelling batter with an orange tint. Now you are ready to cook these! Heat a pan with coconut oil and spoon in your batter. Flip from side to side to ensure this cooks. This makes 5 pancakes.
This is a great way to pack some veggies into the morning. You can serve with pure maple syrup, butter or coconut oil.
