Penne with Spinach, Sundried Tomatoes and Kalamata Olives

Lots of bold flavours in this one!

You need:

Olive Oil

1 onionPenneSunDriedTomatoOliveSpinach1

3 garlic cloves

1/4 cup parsley

2/3 cup sun dried tomatoes

1 cup kalamata olives

2 large handfuls of fresh spinach

2 1/2 cup penne

Parmesan cheese for topping

Do this:

Heat olive oil in a pan, enough for a light coating. Dice your onion, garlic and parsley and put into the hot pan.

Now slice up your sun dried tomatoes and add to the pan once the onions and garlic are soft.

Time now to add the olives. Then the spinach, gradually add as the spinach shrinks in size.

Let this all heat together so the flavours can mix, keep on medium heat.

In the meantime boil water and cook 2 1/2 cups penne.

Once your pasta is cooked, drain and then add to the pan.

Top with some feta and enjoy!
