I always have a pineapple on my counter. It’s one of those things I buy every time I grocery shop.
Here’s my creative spin on a pineapple dessert. It’s super easy and I’ll still file this under the healthy category!
8 slices of pineapple
2 tsp coconut oil
1 tsp brown sugar
1/4 cup oats
3 tsp shredded coconut
Sprinkle of cinnamon
Toss your pineapple slices in the coconut oil and brown sugar. Place onto a hot grill. Flip your pineapple from side to side until you can see grill marks and the fruit is warm.
In the meantime mix the oats, shredded coconut and cinnamon. Now broil this until lightly browned.
Now you are ready to plate, this makes two servings. Lay four slices of pineapple onto a plate and top with your toasted oats and coconut. Sprinkle some more cinnamon on top to make it pretty.
