Big fan of this; fruit in the salad!
Love these fresh, light eats for spring & summer. Try this one for lunch or dinner this week! If you can’t find fresh peaches, this salad would work with strawberries too!
Two cups mixed greens
1 chicken breast
1 green onion
1 tbsp feta cheese
1 tbsp honey roasted soya nuts
6 cucumber slices
Salt and pepper
Do this :
Heat coconut oil in a pan.
Slice chicken into bite sized peices and place into pan with chopped green onion and salt and pepper to taste.
Stir frequently and cook on medium heat. The chicken should lightly brown.
In the meantime toss your mixed greens in your favourite olive oil (grape seed or avocado works nice too). This salad just needs a light dressing as your toppings add the most flavour !
Slice the peach and cucumber.
Once the chicken is cooked top with all ingredients and enjoy.
Makes one salad.
