Sometimes simple is the way to go !
You need:
Olive oil
1 white onion
3 green onions
4 garlic cloves
5 Roma tomatoes
680 ml pureed tomatoes
5 cups fresh spinach
Salt & pepper
Do this:
Cover your pan with olive oil and heat.
Dice the onion. Slice the garlic cloves and green onion.
Add to the pan on low heat and simmer for 5-7 minutes.
In the meantime dice all the tomatoes and keep the juices. Add to the pan once onions and garlic are soft.
Cover and let simmer on low for 5-10 minutes.
Then add in the pureed tomatoes, keeping on low, simmer for 20 minutes. You can puree your own, or use a canned option.
Then add in the spinach and simmer until shriveled.
Add salt and pepper to taste.
This makes enough pasta sauce to serve 5-6 people.
Serve over pasta, I suggest spaghetti. I find homemade pasta sauce tastes better a few days after preparation, so if I want to serve this for Sunday dinner, I’ll make it Friday night.
