Vegetarian Burritos

I Love making these ! Even the meat eaters will be impressed.

You need: 

1 can kidney beans

1 can black beans

1 onion 

2 peppers

1 1/2 cup chopped tomato

A cluster of fresh parsley

1 clove of garlic

3 tbsp chili powder

1 tbsp sriracha

1 tbsp BBQ sauce

8 tortillas

1 cup shredded cheese for topping

Sour cream for topping

Lettuce slices for topping

Do this:

In a frying pan fry garlic, parsley, onions and chopped peppers in oil. I used grape seed oil with yellow and red peppers.

When starting to brown add chili powder. Cook until you can really smell the chilli powder.

Add your kidney beans. Continue cooking on low and then add diced tomatoes. Keep some tomatoes aside for topping burritos later on.

Lightly mash your mixture in the frying pan. You don’t want to over mash this.

Then add your BBQ sauce, keep heating and mixing, always on low heat.

Once your bean mixture is hot and throughly mixed you are ready to build your burrito.

I used sour cream, tomatoes, lettuce and cheddar cheese.
