It’s not rice, its orzo!
You need:
2 cups of orzo
1 1/2 cup sliced mushrooms
1 cup cherry tomatoes
1/2 red pepper
1 medium zucchini
1/2 onion
1/4 cup fresh parsley
1/2 cup grape seed oil
1/2 cup balsamic vinegar
1/2 cup feta cheese
1 tsp hot chilli sauce
Salt and pepper
Do this:
Slice your vegetables into bite sized pieces, toss in grape seed oil then add in the balsamic. Chop your parsley and add into the vegetables. Salt and pepper to taste and marinate for 4-6 hours.
When ready to cook set oven at 375 and cook for 20 minutes, move everything around then additional 20. Total 40 minutes in the oven.
In the meantime, boil water and add in the orzo. This takes just under 10 minutes to cook. Drain.
Mix your roasted vegetables in with the cooked orzo. Add the chilli sauce (this just enhances the flavour a touch) and top with feta.
You now have 5 servings of this wonderful orzo salad.
