Sometimes you have a day where you just think, life is good.
We spent the day hiking Rattlesnake Point in Milton. It’s a great spot, about $13 bucks for a couple to enter, park and hike for the day.
The leaves were mainly green but the weather was nothing short of perfect !
Now it’s the last evening in September, the wine is in the decanter, beers in the fridge and I’m making chilli. Fall is just a good season, isn’t it !?
I’ve been loving sweet potatoes lately and wanted to incorporate them into a chilli.
Here’s what I’m whipping up:
1 tray of ground turkey
4 garlic cloves
2 stalks of celery
1/2 cup fresh parsley
1 can kidney beans
1 sweet potato
1 cup water
3/4 cup cooked quinoa
1 tbsp chilli powder
1 tsp cinnamon
1 tbsp coriander
2 tbsp BBQ sauce
1 can tomato paste
1 diced tomato
Salt & pepper
Franks (if you want some spice)
Basically I added all the ingredients into the pot in that order.
I think a couple times I added more parsley, love that stuff !
Let it simmer for a while. Have a beer & a glass of wine. Smells great.
Spending a weekend doing the simple things with the ones you love… it really doesn’t get much better than this.
Also, this beer goes insanely well with chilli. Just sayin !
