Pumpkin, Oat & Candied Ginger Cookie 

A cookie that tastes like thanksgiving weekend! No turkey in here, just perfectly pumpkin. 

I love ginger and thought this could be quite the match! 

You need: 

1/4 cup butter 

1 tbsp honey 

3 tbsp brown sugar 

1 tsp vanilla 

1 tsp cinnamon 

2 eggs

1/2 cup pumpkin purée 

1/2 tsp salt 

1 cup oats 

1 cup plain shredded wheat 

2-4 tbsp candied ginger (depends on how much you like ginger) 

Do this: 

Preheat the oven to 375.

Mix all your ingredients together in order of recipe list.

The shredded wheat should be crushed & the candied ginger should be chopped into small bits. 

Also the egg, before you add whisk them both together. 

Form into balls, makes about 10-12. Place on greased cookie sheet and bake. 


I love pumpkin this time of year ! In a cookie its superb. These remind me of the breakfast style cookies, just a little sweet & hearty.
