A cookie that tastes like thanksgiving weekend! No turkey in here, just perfectly pumpkin.
I love ginger and thought this could be quite the match!
1/4 cup butter
1 tbsp honey
3 tbsp brown sugar
1 tsp vanilla
1 tsp cinnamon
1/2 cup pumpkin purée
1/2 tsp salt
1 cup oats
1 cup plain shredded wheat
2-4 tbsp candied ginger (depends on how much you like ginger)
Preheat the oven to 375.
Mix all your ingredients together in order of recipe list.
The shredded wheat should be crushed & the candied ginger should be chopped into small bits.
Also the egg, before you add whisk them both together.
Form into balls, makes about 10-12. Place on greased cookie sheet and bake.
