Brothers are great. If you feed them, they’ll always come over!
Joking aside Jonny & I were working on an awesome running project today. We then organized footage over this awesome sweet potato, corn & black bean bowl!
Healthy, accidentally vegan & an awesome lunch to share with your sibling!
You need:
2 sweet potatoes
2 tbsp safflower oil
1 tbsp chilli powder
1 can black beans
2 cups of corn
1/2 red onion
1 tomato
Salt & pepper
Salsa
Do this:
Preheat oven to 400.
Cut sweet potato into bite sized chunks. I left the skin on & thought it added great texture & taste. Toss the sweet potato in the oil, salt, pepper & chilli powder. Place on tin foil lined baking sheet & put into oven. These will bake for 40-50 minutes, make sure you toss them around every 15-20.
Now heat a pan, add in your favourite oil, I used safflower again. Dice your red onion & add. Next throw in the corn & rinsed black beans. Let this cook on the stove top for about 25 minutes.
Dice your tomato, season with salt & pepper.
Once everything is cooked build your bowl, top with your favourite salsa & serve.
Recipe should make 4 servings.

I also think avocado & cilantro would be a great addition to this meal.
The run project we were working on was about the transition of seasons & running. Winter to spring is tough! Lots of false hope as to when the season starts & then overheating when the season really does start!
After being outside on a below seasonal spring day, this meal was perfect!
