Citrus Salmon Salad

Summer 2018 is here ☀️

I love being the host ! So I kicked off the season with a girls night dinner party.

Get the champagne ready as you sizzle some salmon. This fresh citrus salad was a hit.

You need:

4 salmon fillets seasoned with salt & pepper

Olive oil

Spring mix

1 orange

1 lemon

1 avocados

1/2 cup walnuts

Feta cheese

Dressing:

I use about a tablespoon of each and then water to thin it out a touch- you don’t want to add too much !

Mayo

Apple cider vinegar

Mustard

Turmeric (about a tsp)

Water

Honey

Salt and pepper to taste

I love serving up salmon because it’s light, pairs well with many sides and you can cook it quick when company is over.

I like to sear my salmon in a pan. This time I used olive oil. Skin side down first (yes, that’s a “Master Chef” tip- thank you Gordon Ramsay).

Once the salmon is cooked to your liking squeeze a slice of fresh lemon in the pan and then place on top of the spring mix tossed in dressing.

You can slightly warm the dressing too before tossing for bigger flavour.

I like to do each plate individually. Carefully placing my orange slices, walnuts, avocado and feta. Lastly top with lemon zest.

We loved this salad! Girl time is the best. Make the most of your weekends this summer. Even though the season started out rainy in the GTA we just brought “patio time” indoors !
