The Best Way to Make Protein Pancakes

This is my go to breakfast ! It’s easy, low carb, gluten free and delicious.

You need:

2 eggs

3/4 scoop vanilla protein powder

1-2 tbsp unsweetened apple sauce ( if you are using the individual cups about 1/2)

1 tsp coconut oil

1 tsp raspberry jam

1 tbsp natural peanut butter

2 strawberries

Pinch of cinnamon

Do this:

Whisk the 2 eggs. Slowly add in the applesauce followed by protein powder. Mix in cinnamon to taste.

You’ll now have a batter.

Melt coconut oil in a pan. Once hot, pour in your mixture and cover. Keep the heat at a medium setting and flip after 5 minutes.

Cook for an additional 1 minute.

Top with jam, peanut butter and strawberries.

The consistency of this pancake always turns out great. Usually I use a vegan protein either Bodylogix or Genuine Greens.

You can cut the calories down by skipping the peanut butter and jam.

Works with chocolate protein powder too!
